Hello, does anybody know of a worksheet or a similar tool to use in order to gather requirements on an engineering project? Preferably from a systems-level engineer standpoint (i.e. requirements for mechanics, electrical and software).

Sounds like you are looking for a generic systems engineering form or check sheet.
I would search the internet for "systems engineering flow diagram" and review the many that are available. You will need to create a unique flow diagram based on the system you are engineering...
You can Google it a lot of answers are available for this question. I think you need to create a special sheet to store and gathering requirements.
