The maximum torque for a grade 3, 3/4-10 unc is about 230 ft-lbs, but I don't tink you need that. Using Engineers Edge calculator at /torque_calc.htm, if you torque the bolt to 70 ft-lbs you would have about 5600 lbs of clamping force per bolt. This would give you plenty of strength design margin for the bolt. The maximum torque for a grade 5 bolt is 257 ft-lbs.
