Being a German trained Tool maker and a Mechanical Engineer, I don't see any problems from both a machining and design aspect. A good machinist will understand what the tolerances mean. If you look at the ISO tolerancing methods, you will see a "round" nominal dimension followed by the tolerance. I don't see anything wrong with using double plus or minus tolerances.
