I'm looking to make a reuseable surgical tool with temporary blood and tissue contact (~1 hour use). What are the applicable ASTM standards using steel for this application?

Stainless steel from the family of the martensites are usually used. Martensitic stainless steel is much harder than austenitic s.s. and also easier to keep sharp. Because of the higher carbon content they are heat treatable and this makes them super hard. One cannot weld them however. Their typical grades are the 400 series. (410;420;431;440A,B &C 416 etc.) Generally a lower chromium content than other s.s.'s (12% - a minimum of 11 % is required for a s.s. to be a s.s.) although can be up to 20% depending, but like I said, a high carbon content and can also contain a relatively large percentage of nickel (to improve corrosion resistance and promote the martensite structure), making is quite expensive.
